Heat oil in a large heavy pot over medium-high heat. Add onions, celery, and carrots. Sauté until soft, 8-10 minutes. Add beef, veal, and pancetta; sauté, breaking up with the back of a spoon.

Instructions: Set Instant Pot to Saute mode and add oil. Once heated, add short ribs to brown on all sides. (About 1-2 minutes per side) Season with salt, pepper, Italian Seasoning, and basil. Cooking Instructions: Place the bison stew meat in the slow cooker, and then add in all of the ingredients. Mix everything together, just enough to distribute the ingredients around. Cook on low for 2.5 hours, or on high for 1 hour. The bison can become tough if over cooked so we do recommend checking the texture of the meat at 1 hour no matter.
