Fiesta Carrot Pineapple Jell-O Salad is a classic gelatin recipe that is light and refreshing! This salad is also sometimes known as "Sunshine Salad." While the pineapple-carrot flavor combination is unique, they work very well together. My daughter's mother-in-law, Paula Hartman, would always bring this tasty salad to family gatherings.

Directions. In a large bowl, prepare lemon gelatin according to package directions using reserved pineapple juice in place of some of the water. Refrigerate until thickened, about 1 hour. Instructions. In a medium-sized bowl, pour 2 cups of hot water and add 2 packages of unflavored gelatin. Stir until dissolved. Mix in 1 cup of cold water, the can of pineapple tidbits (including juice), grated carrots, and lemon juice. Pour mixture into a jello mold or individual ramekins.

3/4 to 1 cup grated carrots. 1 cup boiling water. Drained pineapple juice and water to make one cup. Dissolve a 3oz. box Orange Jello in one cup of boiling water. Drain pineapple, save juice. Add enough cold water to the juice to make one cup and stir into jello mixture. Let cool while you grate carrots.

1. In a heat-resistant bowl (or directly in a heat-resistant serving dish if not unmolding), dissolve the orange jello and a pinch of salt in 1 cup of boiling water, mixing well. 2. Complete the cup of pineapple juice with the lemon juice and cold water, to make a whole cup of liquid. Add to the dissolved gelatin and mix.

Pour into a mold and chill until set: Add mixture to a jello mold. Set in the refrigerator until firm, several hours. To unmold, dip the bottom of the pan in hot water for about 5 seconds. Invert onto a serving platter, and shake firmly to release. Slice to serve.
