In a large bowl, stir together Quick Crawfish Etouffee, ¼ cup bread crumbs, rice, green onion, hot sauce, salt, cayenne, and 2 beaten eggs. Chill for 30 minutes. In a medium bowl, whisk together remaining 2 eggs and milk. Place flour in a separate medium bowl. Place remaining 2 cups bread crumbs in a third medium bowl.

Add 3 qts. crawfish stock and stir. Let the roux come to a simmer, taste and add seasoning as needed - cayenne, thyme, salt, Cajun seasoning, a little hot sauce, bay leaves and tomato paste (which is optional). Stir and cover, and let simmer for an hour and 10 minutes. Add 1 lb. of crawfish tails, stir to simmer for 3 minutes.

Gravy: Heat oil in large, heavy pot. Stir in flour. Continually stir until roux is a caramel color. Add onions & celery & saute' until veggies are tender. Add water, salt, red pepper, & tomato sauce. Let boil a few minutes. Add crawfish balls & remaining 1 lb crawfish tails. Simmer 20 minutes or more. Adjust seasoning if needed.

In a large pot bring all liquids to boil, add butter and seasonings. Slowly stir in grits while whisking nonstop for about two minutes. Reduce heat to low and cook grits, stirring occasionally for about 20 minutes. Adding extra broth as needed to keep the grits thin. Add cheese and whisk well, add more broth if needed.

Step 3. TO PREPARE the BISQUE GRAVY: Mix the oil and flour in a heavy 4 quart saucepan. Cook over a medium high heat, stirring CONSTANTLY until a dark brown color is reached. Slowly, add 1 quart of water and allow to slow boil for 30 minutes, until pretty thick. You can add more water, to reach the desired consistency, but do NOT add more than.

Step 1. To prepare the stuffing, melt the butter in a medium to large pot. Add the onions, bell pepper, celery, salt and cayenne and a cook until soft and the onions are clear. Melt butter in a pan. Add in the onions, bell pepper, celery, and garlic. Sauté for 2-3 minutes. Add in the crawfish fat, liquid crab boil, 1 TBS Cajun/creole seasoning, and onion powder. Using a slotted spoon, remove the bacon and set aside. Remove some of the fat, leaving enough for frying in the pan. Add the celery, garlic, bell pepper, and jalapeño to the skillet and fry until they turn soft, about 20 minutes. Add the onion broth mixture, bacon, and crawfish tails. Heat once more.

Step 1. Cook bacon in a cast-iron or other large heavy skillet over medium heat until fat is rendered and bacon is crisp, about 12 minutes. Using a slotted spoon, transfer to paper towels to drain.
