This is one of my favorite American cheeses and for good reason. This artisanal producer has mastered making the perfect goat cheese with a fine layer of vegetable ash in the middle.

The ash also coats the inside of the rind — and is the reason many people confuse it with a blue cheese — surrounding a gooey creamline, which together enclose the central.

Much like in Europe though with geographical place names, Humboldt has become quite common.

With a bloomy, white but edible rind, this cheese tastes like butter & cream. It is considered a medium-aged cheese that is great as an appetizer, on a cheese.

Re-wrapping soft-ripened cheese in wax or parchment paper will allow the cheese to breathe as it continues to ripen. Remove Humboldt Fog from the refrigerator at least one hour before serving. Humboldt Fog has a microbial (non-animal) rennet.
