Irish Lamb Hand Pies

Put lamb in a roasting pan and cook for about 35 to 40 minutes for rare meat, or until an instant thermometer inserted into the thickest part of the meat reads 130 degrees, or, for medium rare, 135 degrees. Let the meat rest for at least 20 minutes for the juices to be redistributed before slicing. (Note: You need about 1 pound of cooked lamb.

Place a rack in middle of oven; preheat to 350 degrees F. Working with one at a time, roll out each pie dough on a lightly floured surface to a 12" square. Cut each square into 4 smaller squares; transfer all 8 pieces of dough to 2 parchment-lined baking sheets. Spoon filling onto one side of squares, leaving ½" border.

Season with salt and pepper, stir, add tomato paste, oregano and chilli flakes and continue to cook for another minute. Brush the pasties with more egg wash, sprinkle with the za'tar and bake on the middle shelf of the oven for 20 to 25 minutes, or until the pastry is cooked and the filling is hot through. Flaky, chickpea flour pastry and spiced lamb mince filling packed with herbs, Moroccan spices and more chickpeas!

Preheat the oven to 150°. Heat the olive oil in an ovenproof saucepan and brown the meat. Season. Remove the meat and add the onion and garlic.Cook for a few minutes then add all the spices. Cook for a few minutes whilst stirring. Add the tomato and coconut milk to the pan and then add the meat.

Stout and Lamb Filling. Heat oil in a saucepan over medium heat; add carrots and onions and cook until slightly tender, about 6 minutes, stirring frequently. Add 1 cup water to the lamb, lower the flame, cover and cook for 6-8 minutes, stirring occasionally. Remove the lid and continue to sauté the lamb until the water dries up, then turn off the flame and mix in the pine nuts and cilantro. Set aside. Preheat your oven to 400 Fahrenheit. Cut the puff pastry sheets into 3x3 inch squares.

For Hand Pies: Heat oven to 400°F. Combine cubed potatoes and carrots in a micro-safe bowl, drizzle with 2 tablespoons water, cover, and cook on high to steam for 4 minutes or until softened. Drain. Cook frozen peas in microwave as instructed on package, and drain. Combine spiced lamb and vegetables. Season to taste.

Heat large sauté pan over medium heat. Add olive oil and then onion. Cook until translucent then add garlic. Do not brown garlic. Add lamb and cook until done. Remove meat from pan and drain. Add chicken stock and potato to small saucepan over medium heat. Bring to simmer and cook 3-5 minutes until tender. Remove potato from pan and continue.

Place all the lamb curry puffs/lamb hand pies on a baking sheet. Brush them evenly with the egg+butter mixture. Place the tray in the oven and bake for 15-18 minutes or until golden brown in color.
