In the Sephardic community, many families hold a Rosh Hashanah seder where a series of symbolic foods are eaten before the meal. Each of the chosen foods —generally a pomegranate, date, string bean, beet, pumpkin, leek, and fish head — symbolize a wish or blessing for prosperity and health in the coming year.

Ingredients. 1 cup dried black beans or canned black beans, rinsed and drained. 1 cup black or green lentils, rinsed. 2 tablespoons olive oil plus more for garnish. 2 large yellow onions, finely chopped. 1 teaspoon ground turmeric. 32 ounces goat yogurt.

1 can (about 15 ounces) canned beans, chickpeas or lentils drained and rinsed (any variety) 1 cup unpeeled redskin potatoes, cut into ¾ inch dice; 4 cups mixed fresh or frozen vegetables, thawed (I used corn, green beans, peas and baby okra) Salt and fresh ground pepper to taste; ¼ cup extra virgin olive oil; Directions

The central observance of Rosh Hashanah is listening to the blowing of the shofar on both mornings of Rosh Hashanah.
